The first proper rain of the season always changes my plans. Suddenly, salads feel uninspiring, elaborate meals seem unnecessary, and all I want is a hot cup of chai and something crispy fresh out of the kadhai. Maybe it is nostalgia. Maybe it is the sound of rain hitting the windows. Whatever the reason, monsoon and pakoras remain one of India's greatest food pairings.
Every family has their favourite version. Some swear by onion bhajis, others reach for paneer pakodas, and someone inevitably suggests making "just one more batch."
